Mix everything together until it forms a coating on the chicken, then dust it with flour and deep fry it in peanut oil until crispy. Now brush your chicken with the lemon glaze you made earlier, and your tasty and filling chicken is ready, oozing with chicken and lemon flavours.
Chicken Piccata
Preheat the oven to 350°F. Butterfly your chicken breast and pound it flat. Coat your chicken in flour and season it with salt and pepper before cooking it in a pan for 3-4 minutes. Add some oil to the same pan and toss in some capers until your kitchen smells like ki capers. Now add some chicken broth, a squeeze of lemon juice, and cook until the liquid has reduced to half its original volume, then add three tablespoons of cold butter and whisk until the butter has melted into the broth. Add your previously cooked chicken breast and coat it in the glaze; your chicken is now ready to be served. Put your chicken breast on a plate with a side of buttered spaghetti and some chopped cilantro on top, and you've got yourself a refreshing chicken piccata, a great summer lunch recipe.
